Timothy Olyphantastic spoke with Bon Appetit to promote the last season of Justified. This is an unusual approach. I’ve been looking forward to talk show apperances. Maybe Tim’s saving himself for later, which is just as well. The show has become a hate watch for me (ever since the Drew Thompson mystery). People are raving about the new “Choo Choo” character, but it’s not that funny. I turn into the biggest bitch when this show comes on because it used to be stellar. I still dig Olyphant though. If the show only featured him standing around in jeans and bantering with Walton Goggins, I’d be so much happier.

Anyway. This interview is hilarious and may give you the munchies. Bon Appetit published a photo of Tim praying over some fried chicken. He talks all about his favorite peanut M&M’s, honey-topped ice cream, and how it’s a sin to Instagram at the table. Here are Tim’s thoughts on coffee, rice cookers, fresh pepper, and overpriced omelets:

His morning routine: “Coffee/espresso/cappuccino is a big part of it. I enjoy it, and if I don’t hand my wife 
a coffee by a certain point, I won’t live to 
see the rest of the day, so it’s important in 
that respect. I’m the barista at the house. I’ve taken a 
milk-art class; I can put a heart on top of the cappuccino. I’m very proud of that.”

His big cooking tip: “A rice cooker has changed my life. The overnight-oatmeal deal is a big win at the Olyphant house. That’s been a big part of the pleasure of the morning — coming downstairs after the oatmeal’s been slow-cooking all night, with bananas and whatever else you want thrown in. For all you oatmeal lovers out there, it’s the greatest thing in the world. [Instant oatmeal] is no way to live your life, young man.”

Is he a manly eater? “I like to think that I eat like man and cry like a little baby. There’s a quiche joke in here somewhere.”

Shh, don’t tell: “I’ll admit a little something: If I go to one of those hotels where there’s like a $50 omelet, I’m taking the silverware home with me. I’m not saying it’s right. I just feel like it’s an unspoken agreement where the mug and the silverware are just part of the deal.”

Pepper & Parmesan: “If you’re at a restaurant and someone asks, ‘Fresh pepper?,’ the answer is yes. When people shake off the fresh pepper, they clearly have no interest in living a full life. Same thing goes for grated Parmesan. Why would you turn that down?”

There’s more stuff too. He talks about whiskey and how his three kids get frustrated that Dad eats all the ice cream. Make no mistake, Timothy Olyphant loves food. He eats everything, all the time. It’s hard to believe how he stays so thin, and his foodie habits haven’t caught up with him by age 46. But he was a competitive swimmer in college, and he plays tennis now. I’m including some photos of him at a celebrity tennis tournament last year. That headband.

    This season is great. I don’t understand what you are complaining about. I’ll take it any day over Game of Thrones or any other show with too much violence and female nudity. It relies on the characters and killer dialogue.

      I hear you. Everyone keeps telling me how good this season is, but I just don’t see it. There’s something wrong with me + television.

      Yeah I’m digging this season so far. I’m worried about Boyd. It seems like he’s legitimately in over his head now.

        Please tell me I’m not the only one who hopes Boyd and Raylan ride off into the sunset with their ladies at the end! But separately, so no one has to kill the other one.

      @ Ann, Exactly! From day one Justified has relied on great dialogue, plots and amazing actors. I’ve never understood why this show has not gotten more attention in terms of both ratings and awards. Walton Goggins should have a room filled with Emmys, SAG awards and Golden Globes for what he has done with Boyd. I’m really going to miss this show when it ends this season.

      Dialogue has really stepped up; it verges on Shakespearean at times and I love it. But I have always loathed the Ava storyline and I am sick of Boyd, too. I can’t believe I am saying that, but his storyline is one unbelievable “get away with it” after another, and he’s becoming a caricature. I want more Raylan, and more Raylan taking care of business.

      I love Justified so much. Last season wasn’t the best story wise, but the dialogue and the acting is always just stellar. This season has been great so far and I feel like it’s going to have a very good ending.
      I can see that it’s not for everyone, but I can’t imagine hate watching it. It’s just not that kind of show.

        See, I hate myself for hate-watching it. But I can’t stop watching it because then all the built-up hate will be for nothing. Only 10 more episodes!

        Really, I hate what they’ve done to Ava. Raking her over the grills for several seasons because she killed a pimp. At least Joelle Carter’s getting more screentime this season. Maybe she’ll be the only one who gets out alive.

    He has such a young-looking face, not even the silver hair ages him. I dare to say I’d probably mistake him for someone who’s in his late twenties/early thirties if I didn’t know any better. Vampire Realness!!!

    Excuse me, though. I have a rice cooker. I make rice and peas in it. I have never used it for PORRIDGE.

      He’s really great on Justified, Sixer. I think you can watch it streaming? Maybe on Netflix?

      He’s always such a fun interview–and he’s hot, even with the dorky headband.

      Edit: I guess they don’t have it on streaming but you can rent the DVDs.

        I agree. Awesome interview. I have no idea how he got the whole package: hot, smart, funny, intelligent, down-to-earth, good mate… but I’ll line up for one of his clones if they start replicating him.

      Is your (American your) oatmeal all pappy like Ready Brek? Or is it all proper and lumpy like MY PORRIDGE? I put JAM (homemade) on my PORRIDGE.

      It is shown here but I thought it was just another American procedural with plastic people (sorry). Explain it to me. It might be on UK Netflix or past series are often available via Sky streaming. Convince me and I’ll watch it!

      I definitely recommend checking out the show. I think it’s a great adaption of Elmore Leonard’s work, the writing is fantastic, all the actors (including those in bit parts) are great and well cast, and it has a lot of tension but also a lot of humor. The first season starts out sort of procedural, but then they start getting more into Raylan’s backstory and a continuing storyline, and it is SO GOOD.

      Now I’m hungry with all this talk of jam.

        Season 2 is some of the best television I’ve ever seen. My mother swears up and down (we lived in Kentucky for a long time) that she knows someone just like Mags Bennett.

    OK, why have I never heard of Timothy Olyphant before? He’s gorgeous, even in the sweatband. (Hubby wears a headband that makes him look like Mike Reno from Loverboy, so I can judge lol). I never put pepper or cheese on food as I think the food should stand alone as is. I think it’s covering up bland tasting food lol.

    Oh yea… I hate watched last season (5) of Justified too.

    I got to the point I just recorded the last 6 episodes, to watch all at once. It had annoyed me so much, with how it went no where (story wise) for too many episodes. I had really began to wonder if Elmore Leonard had really been secretly been writing the bulk of the story line, yearly. He passed away and the show suddenly lost it way to tell a story.

    This season has been so much better. (I had really enjoyed the first four seasons.) I am especially happy to see that Gutterson is getting to be on the road, with Raylan this season. About dang time!

    Now I do love Garret Dillahunt (Ty Walker) and Sam Elliott (Avery) as the villains this year. Garret especially. He has that same scary charm that Boyd has… which I am looking forward to how scary he gets.

    But that also goes back to Garret Dillahunt being the ultimate scary man in Deadwood. Very well spoken… and killing women. Maybe he will be the one who puts a bullet in Katherine. Because if he doesn’t… Boyd will.

    I have always enjoyed Ava. She has never over played the accent and really she has no problem with killing people… or that critter of Coovers. Ava is not the one to mess with.

    Yet, the best odd moment, that I loved the most so far… Wynn Duffy in his Speedo… tanning away in his hotel room.

    And OMG… yea… I want to know how Olyphant eats all the ice cream… and keeps the hard body. He would have to be in the gym for 90 minutes, daily.

    Yes, matter of fact I do want the fresh ground pepper and grated Parmesan on my pasta!

    I can’t recommend this show enough; it’s the best dialogue since I-don’t-know-when. It takes a few episodes to hit its stride (Goggins was going to be killed off, but he vibed so well they wrote him in), but by the end of the first season, I’ll eat my hat if you’re not hooked. I crush on Olyphant like I haven’t done since friggin Viggo in his heyday with LOTR.

    Forgot to mention that this show made me get a crush on the South, in general. It’s got the best sense of Place. Makes this city girl envious of hillbillies!

    I haven’t seen him in any decent films but I guess he makes a living. The thing I remember about Olyphant is that he manages to get cast with very young starlets as his love interests yet escapes that dirty old man vibe. I think it’s his kooky air that makes that work. He looks like a muso or a guy who was in a rock band in high school and never grew up.
