Over the years, I’ve absolutely softened on the Duchess of Cornwall, that old wine bag. I actually have a great deal of affection for her at this point. She seems like a hoot – always half in the bag, forever blousy and white-blonde, always up for a laugh and always in the mood for some good local cuisine. On Tuesday, Camilla celebrated her 71st birthday. It was a working celebration, because Camilla and Charles are currently on a tour of Cornwall, trying to stir up some tourism. When they landed on the Scilly Isles, Camilla was greeted with a bouquet of flowers and a cake! The cake was… carrot cake. And it read “Happy Birthday Ma’am!” You can see the cake in the photos below:

Apparently, Camilla did have a piece of the cake while Charles looked on, perhaps wondering what all of this was about. Seriously though, I have such strong feelings about cake. I wonder if the peeps in Scilly Isles got a heads up that Camilla might like a carrot cake, or if they just made it on a whim, just to see if she would eat it. Some people love carrot cake – I am not one of them. If I was given a carrot cake for my birthday, I would be nice about it publicly but I would be quietly insulted that anyone would ever think that I would eat motherf–king carrot cake FOR MY BIRTHDAY.
Anyway, this is just a reminder: Charles and Camilla aren’t getting any younger. I feel like out of all of the royals of this generation, Camilla might be the one who officially “retires” next, like the Duke of Edinburgh. But maybe she’ll keep working if they keep bringing her wine, cakes and pastries.

Lol, same. I do wonder though if carrot cake over here is something different than in the US. We don’t get it with frosting and make it with a ton of hazelnuts. It’s this delicious soft and moist treat that’s not overly sweet and actually fills you up for a while.

I like carrot cake. Pre vegan I used to get these amazing carrot cupcakes and eat like 4 in a sitting. Lol Post vegan I haven’t found any that don’t taste like sweet cardboard.
Really? What do you think the problem is? Cake or frosting. I would think the apple sauce sub for egg would work really well in a carrot cake. I’m not vegan, but I love making vegan desserts.
Have you tried coconut oil or coconut butter as the basis for the frosting?
@nota and Team A It has been mostly the frosting. I loved the cream cheese frosting. I tried it with vegan cream cheese and it was gross. I haven’t attempted it with coconut oil butter though. Hmmm. The cake part hasn’t been great either.
My vegan buttery flavoring hack is at the end of cooking something like Indian food: I stir in a big dollop of Earth Balance vegan butter and it works. I do it with vegan macaroni and cheese or mashed potatoes. While it is hot I stir in and serve.
I love using applesauce in baking as an egg substitute and recently discovered mashed ripe banana for pancakes and waffles. It tastes good when I make matcha muffins.

Coconut cream makes good whipped topping but it’s so coconutty that it’s overwhelming (to me, anyway, and I like coconut). Maybe try whipped aquafaba frosting? The flavor is a pretty neutral base for anything else you might want. I’m not vegan but I like to have these things in my arsenal in case of an occasion where I need to make something to meet special dietary needs. You can pry my dairy products out of my cold, dead hands. I can do without meat but leave me real cheese, thanks. Haha.

I miss cheese. Meat was easy but cheese was hard. I miss cheese with a glass of wine. Forget it I miss cheese period. I understand why some people can only do vegetarian. CHEESE.

Odd title for a story! What’s “ew!” about carrot cake? It’s one of my favorite kinds, and just about everyone I know likes it. To say you’d be offended, indignant, and disgusted if someone baked a carrot cake for you seems a bizarrely exaggerated and ungrateful reaction.
I don’t see an exaggerated reaction at all. I see a perfectly natural reaction to carrot cake. Nasty, gross, disgusting, horrible, horrible flavour. That’s what’s wrong with carrot cake. It ranks right up there with fruit cake as a cake that should never be made.

A homemade carrot cake with cream cheese icing is my birthday cake of choice too! Not too sweet and it keeps well. Never thought I’d have anything in common with Camilla.
Yes if it’s homemade and untainted by pineapple, raisins or nuts of any kind, I like it. And homemade icing with real cream cheese (despite being allergic to dairy) or forget it.
Love carrot cake! Has to be home made or high quality, not the cheap stuff which is disgusting.

Yeah, I’ve known a few elderly upper-crust British women of her age and they are either incredible snobs or really down to earth and full of energy and life. Camilla seems to fit into the second category. I think she enjoys her public role so I don’t think she’ll retire just yet, but she might slow down a little.

I take it you guys never had a proper carrot cake. It is actually worse than chocolate cake since it contains more fat. And fat is the key ingredient into making anything delicious plus sugar.
I am a fan of both carrot & chocolate cake. But I have tasted some not so good carrot & choc cakes. I just know where to buy the good stuff.
Carrot cakes vary, perhaps more than some other types of cakes. But a good one is great! Also, I saw a picture online of Charles’s sneaking a bite of cake off Camilla’s plate so he did taste the cake.

I was thinking of carrot cake for our wedding cake. In fact I was all set on it. Then I ate a sample of the red velvet cake – which I was never a fan of – and it was the best cake of the bunch. That with the cream cheese and the filling. It was the best decision I made for the cake. I’m guess the bakery just didn’t know how to make the perfect carrot cake. I found a recipe online that is the best. Now I want carrot cake.
Red velvet is incredible when it’s made correctly, but most places make it too sugary. It needs just the right touch of vinegar to offset the cloying sweetness.
I’ve never understood the appeal of red velvet. Isn’t it just dyed chocolate cake?

The original early 20th century Waldorf Astoria red velvet cake recipe uses canned/jarred beets, that’s where the red color originated c: the difference between food coloring and cocoa vs beets and cocoa is astronomical – it’s a darn good cake made properly. Very dense and rich. One of my culinary professors worked at the Waldorf for decades in food and beverage operation and this was his go-to whenever we had an in-house catering project.
I never liked red velvet until I had that recipe.
In original red velvet cakes (in the 1800’s) the cocoa they used either had a subtle red tint, or the vinegar and buttermilk turned it a subtle red. I’m not sure which one is correct. The beets were added later to enhance the red coloring.
I stand corrected! Doing some research, apparently unprocessed/non-alkalized cocoa contains the same color compounds as red cabbage, so it looks like you’re right on both that it acts like a pH indicator and brightens up when there’s acid involved because it has those compounds/tint anyway. Apparently you can still make old fashioned red velvet cake without any dyes/beets if you’re using non-dutch-process cocoa powder and it’ll still work. It’s definitely not as bright from the pics but there is an obvious change.

I lurrrve carrot cake. Spice, nuts, cream cheese frosting, yes please. My only issue is that sometimes people add pineapple, to which I am allergic. I never realized carrot cake was British until it was a challenge on the Great British Bake Off.

Oh Sarah, I’ll take your word for it 😉 Pineapple is one of those fruits I’d rather actually eat in natura. Same for strawberry – one of my favorites, but I detest strawberry-made everything. Coconut I truly dislike in any shape or form.
I like Camilla too and she probably likes carrot cake. I am afraid that her life time of smoking may catch up with her in the form of cancer or copd which would devastate Charles.
Happy birthday Camilla! Used to, I couldn’t stand her. Loyal to Diana and all of that. But over the last 10 years I think I’ve come to appreciate that she shows up, looks appropriate, engages with people and seems like she’s a lot of fun. And she seems to have found her place in The Family. Plus it looks like she and Charles are happy. That’s not an easy situation.

I was the same but I’ve definitely come to realise relationships are more of a grey area than black and white. How Diana was treated was just awful, but from Charles and Camilla’s perspectives they fell in love (and a life long kind of love) with each other when their relationship would never ever have been allowed. Back then Charles’ wife, because he was heir, had to be royal, a virgin and protestant and absolutely nothing scandalous like a divorcée. She was already out of the running before they’d even met. I can’t imagine how elated they must have been when they were given the go-ahead to marry.
In Brazil, carrot cake is usually served with chocolate frosting, and i LOVE this combo – very earthy and delicious. Not a fan of cream-cheese frosting version in US.

I love carrot cake. And hummingbird cake and red velvet cake, and vanilla cake… The only cake I don’t like is Pineapple Upside Down cake which is vile and an insult to pineapple. And I dont like chocolate cake with chocolate icing. It’s just too much for me. Though there is a chocolate bundt cake from a restaurant near my office that is the BOMB. So that’s my one exception to the chocolate on chocolate rule.

Carrot cake is one of those cakes that I will eat if there’s no other option. The frosting is the best part though. My husband on the other hand will choose carrot cake first before anything else. Weirdo.

I don’t think people have forgotten history, but if you’re going to hate Camilla you have to hate Charles and Diana too. No one came out of that affair smelling like a rose. IMO, Charles is the far more guilty one out of all three, but Diana wasn’t as innocent as she pretended.
As his bride of 19 years old, I don’t blame Diana. She didn’t know yet that her husband had fantasies of living in the married Camilla’s underwear. He’s an old man now, his sons obviously accept her, so it is what it is.

I like Camilla and will never understand why people continue to hold a grudge or anger against her when they don’t even know her and her family personally. I’ve read that Camilla is very well liked among royal reporters and family. She’s apparently a hoot, and I can totally see it. I’m outside the Camilla Hate generation of Diana worship, so it always puzzles me when people (not here) don’t acknowledge how clearly happy and well-matched she and Charles are together.

I’m two years older than Diana would be. I clearly recall being kind of meh over them as a couple. At two years older than her, I wouldn’t have looked twice at a 32 year old guy. Then there was the engagement interview and question of love to which Charles answered “whatever love is”. Writing on the wall as far as I was concerned. Diana knew what she was getting into. At this point 30+ years on it is apparent that Charles & Camilla make a great couple so let’s move forward.
If y’all ever are around any of The Palm resteraunts (especially palm 1 and palm 2 in NYC) go in and get a slab of their carrot cake. No raisins, just heaven. You don’t even think about carrots when you taste that moist, perfect, buttery, creamy, fresh oh my god I’ll brb getting on a train to go get that cake!

Diana was singular human being, but she’s been gone for 21 years.
Camilla seems like a kind woman who takes her role seriously. She and Charles made some very poor choices years ago, but they seem very happy now and they’d probably be married now even if Diana had not died. I can’t hate Cams, she’s probably a blast.

My Mom made the best homemade carrot cake. Everyone loved it & it would disappear in very short order despite the calorie content. It spoiled me for anyone else’s carrot cake.
Happy Birthday, Camilla! I was a big Diana fan but have always liked Camilla. Charles and Diana were mismatched. But the past is the past. It can’t be changed so there’s no sense dredging it up. Charles and Camilla are very much in love and they make a terrific team. So good for them.

I made it for both of my sons for their first birthdays, it’s easy to do low sugar but still fun and frosted.
Today’s the 20th bday of my eldest, but he’s away at college and working, it’s our first year where we are not able to celebrate with him on the day, eating a huge cake with all of his friends- last year we did a baked mt Hood, our version of a baked Alaska: it had strawberry lemonade tillamook ice cream inside! But gosh, it was difficult!! I thought I could tackle it no worries after years of making ice cream cakes but the mixer broke and I had to whisk the merengue by hand (3 of us took turns! Lol) and our mt Hood was humongous. Kinda makes me miss those baby carrot cake days 🎂😊

I think carrot cake is a favourite of Camilla and Charles… Charles likes his vegs for sure and no doubt got Camilla on a healthier diet, especially around the time of their engagement. Also, Charles influenced Camilla to stop smoking. Camilla makes Charles very happy. Charles is often photographed with a big smile when he’s with Camilla. Something rarely seen when he was with Diana. Charles and Camilla are very, very good for each other.
Carrot cake is great. The Momofuku Milk Bar Carrot Cake recipe, incidentally, is one of my favourite cakes.
Happy Birthday, Duchess! I would love to have some wine and carrot cake with her; the stories she could tell! I love her no-nonsense approach and work-ethic; she has taken on patronages she is passionate about and it shows. She and Charles were truly meant to be together and still seem to adore each other. I am sorry they weren’t able to get married the first-go-round and that people got hurt, but I’m glad they were able to be happy together now.
Camilla has grown on me despite the history. That said, I’m a little surprised no one alluded to carrots being suitable for a horse faced woman because this is a “bitchy” site. But she doesn’t look as long faced as she used to either. Happy Birthday to her!

Carrot cake makes me think of my mom who always ordered a rich yummy carrot cake for family gatherings. My preference is usually something killer chocolate. Someone up thread said they didn’t care for chocolate cake with chocolate frosting. That it was too much chocolate. Ah ha ha. What kind of foolery is that? There is no such thing as too much chocolate.
I still throw shade on Charles and Camilla. I just can’t with either one of them. What they did to Diana is unforgivable. I just looked at a picture from C&Cs wedding and William and Harry looked stricken. Those poor kids. Maybe time has healed some of their wounds. I can never give C&C a pass for their horrible selfish behavior. Just nope. And I know no one gives a crap what I think but I’m just saying it anyway.
We had carrot cake at our wedding at my hiusbands request (it’s his fave) and it was amazing simple and rustic and utterly divine! I ate it for breakfast the next day!
I like Camilla she’s great and I think she looks better with age too.
@Anare, the world easily forgets. I remember Diana and her pain. It hurts that Charles was unfaithful but he didn’t get to “die” like she did.
Diana’s struggle was for women in marriages with cheating husbands . I will nevet forget that.
Diana actively pursued at least two married men. Her struggle at the time appeared to be that neither would cheat on his wife. Or maybe they did. Either way, it seems that she gave very little thought to their wives.
